Watermelon and Cucumber are both made up of over 90% water! So as the days become hotter and hotter, this quick and easy watermelon, cucumber and mint salad is super hydrating and refreshing. With pops of color, it’s also kind of pretty. This is a great dish to bring to any Summer BBQ, Get-together or potluck because it fits so many dietary needs. In the summer, I almost always have watermelon, cucumber and mint readily available and this makes a perfect side dish, appetizer or even just a snack.
Options, Substitutions and Tips!
- In the recipe I provide the serving size for 1 because it is so easy to completely customize depending on how many people you need to serve. In the pictures provided, I made the salad to serve 6 people. I used a quarter of an entire watermelon which chopped up was about 3 cups and 2 cucumbers. I used a handful of fresh mint chopped into tiny pieces and then left a few pieces whole to add on top.
- You can also use a melon baller for the watermelon (about 6 balls=1 serving size). You can slice the cucumbers and leave them in a full circle, or slice them in half semi-circle like I did.
- Totally optional-I used a peeler and shaved 4 long strips down each side of the cucumber to make a pretty checkered design.
- This is great on it’s own, but the addition of a little bit of crumbled feta on top adds a creamy, salty flavor that mixes really nicely with the sweet watermelon, crunchy cucumber and fresh mint.
- I am no experienced gardener, but even I haven’t been able to kill off my pot of fresh mint. If you’re looking to start growing your own herbs, they are pretty hearty and if grown/left outside they are perennials and come back each year.
- You can also make this into a really great appetizer. It will add a little bit of extra prep time, but is still faster than most appetizers. Using the cucumber as the base, top with a chunk of watermelon, (optional-add a little bit of feta) and then a tiny bit of mint on the top and hold together with a toothpick for a perfect bit size and easy to grab appetizer:
- As mentioned in the recipe below, this can be prepared and enjoyed immediately or in advance and then refrigerated. Due to the high water content in the watermelon and cucumber, as soon as you chop and slice them, they begin releasing lots of liquid so it’s best to eat within 12 hours of preparing.
Watermelon, Cucumber and Mint Salad
So refreshing, so easy! Chopped watermelon, cucumber and mint make a perfect hydrating salad, appetizer or snack to enjoy on a hot Summer day.
- ½ cup Chopped Watermelon
- ½ cup Sliced Cucumber
- Fresh Mint
- Optional-Crumbled Feta Cheese
The serving size provided is for one person which makes this easy to completely customize by multiplying the serving size by the number of people. For a reference, when making for 6-8 people, the quantity needed was a quarter of an entire Watermelon, 2 Cucumbers and a handful of mint.
Cut watermelon, remove rind and chop into desired size chunks. Slice cucumber.
Mix watermelon, cucumber and mint together. Optional-add a little bit of crumbled feta on top.
This can be made a few hours in advance and refrigerated, however due to the high water content in the watermelon and cucumber, it is best eaten within a few hours of preparing before it can become watery.
