This is so colorful and fun to make. It came about, because I had a pre-made pizza crust in the freezer along with Tzatziki sauce and a whole bunch of Greek veggies/toppings. I drizzled a little bit of olive oil and salt, pepper, garlic powder and baked the pizza in the oven. While the pizza crust was baking, I cut up and organized my toppings. When the pizza was done, I spread out the Tzatziki Sauce on the crust. Then I topped the pizza with Lettuce and a whole bunch of veggies, olives and feta cheese. The result was an awesome lunch, that only took 10 minutes to make!

Options, Substitutions and Tips!

  1. I used a frozen plain thin-crust pizza. Any pre-made or made from scratch pizza base or flatbread can be used. I even made this at my parent’s house using a frozen cauliflower pizza. It came out great which means this recipe can be made fitting lot’s of dietary needs such as gluten-free. Cooking times will vary based on how long the base you choose takes to bake.
  2. Toppings!!! The options for toppings are endless. I used peppers, tomatoes, cucumbers, olives and feta cheese. Some other toppings can be chick peas/garbanzo beans, any protein like a grilled chicken, red onion, artichokes, eggplant, sundried tomatoes.
  3. For this recipe, I used a store made Tzatziki sauce. I have also made my own homemade Tzatziki sauce in a quick pinch by mixing plain Greek yogurt, very thinly sliced cucumber, garlic, salt, pepper and a few squeezes of lemon.
  4. I used a Mediterranean Salad blend of Romaine Lettuce, Shredded Broccoli, Radicchio and Celery. You can also use plain chopped romaine lettuce or any romaine lettuce blend.
  5. For slicing the pizza I used my kitchen scissors. This made it easier to cut through the crust and the toppings. A few fell off, so I just picked those up and rearranged them back on top of the slices. I cut the pizza into 8 slices, but you could cut them into 4 big or 6 medium slices too!
  6. I haven’t had any leftovers any time I’ve made this to see how it would do in the refrigerator. It most likely will not be as good as fresh, but it’s so quick and easy to make I recommend trying to serve/eat it as soon as possible. All the toppings can be prepped in advance which make it even faster to make.

Mediterranean Pizza

Pizza or flatbread with a tzatziki sauce base is topped with lettuce and any combination of peppers, tomatoes, cucumbers, olives, & feta cheese. This makes a great lunch, appetizer or even light dinner and takes less than 15 minutes.

  • 1 9-inch Pre-made Pizza Crust or Flatbread
  • 6 oz. Tzatziki Sauce ((approx. ½ cup))
  • ¼ cup Red Pepper ((chopped))
  • ¼ cup Yellow Pepper ((chopped))
  • ¼ cup Grape Tomatoes ((chopped))
  • ¼ cup Cucumber
  • Kalamata Olives
  • Feta Cheese
  • Olive Oil, Salt, Pepper & Garlic Powder ((optional))
  1. Prepare pizza crust/flatbread following provided instructions. The pizza used in these pictures was a 9-inch plain thin crust pizza that was baked at 420° for 7-8 minutes. Optional, drizzle crust with 1/2 TBSP of Olive Oil and season with salt, pepper and garlic powder.

  2. Prepare toppings. Chop and slice vegetables such as red pepper, yellow pepper, cucumbers, grape tomatoes and olives.

  3. When pizza/flatbread is ready, allow to cool for about 1 minute then spoon and spread tzatziki sauce on crust.

  4. Add lettuce on top of tzatziki sauce.

  5. Evenly distribute toppings throughout the pizza. Crumble feta cheese on top.

  6. Using kitchen scissors, a pizza cutter or very sharp knife, cut/slice pizza and serve.
