Chickpea Caesar Salad Wrap

This is my new go-to lunch when I need something that I can put together extremely fast and still be healthy. I’ve made this in as quick as 5 minutes using lettuce from my garden, a can of chickpeas, a handful of croutons and then mixing the Caesar Dressing which is only 4 ingredients. Not only is this fast, but it’s also satisfying with nice crunch from the lettuce and croutons and creamy and tangy from the Caesar Dressing. Chickpeas are a great substitution for chicken that is more commonly used in Caesar Salads, because chickpeas are high in protein and fiber (and have lots of other health benefits). This helps make these wraps filling and a great lunch or snack.

Options, Substitutions and Tips!

  1. I recommend Romaine Lettuce for this recipe and if buying from a grocery store, I find the best ones to use as wraps are called “Romaine Hearts” or “Hearts of Romaine” and usually come in a 3-pack. Romaine Hearts are the center lettuce leaves, and the ideal shape for wraps. You could also substitute with other lettuce such as Boston Bibb or Butter Lettuce, if you can find them in the right shape that will work for a wrap.
  2. I used a Creamy Dijon Mustard and not a Whole Grain Dijon Mustard.
  3. I’ve also had this and added some chopped cooked Rotisserie Chicken, which was very yummy.
  4. Some other additions could be cucumbers, tomatoes and a hard boil egg.
  5. This makes a great prepping meal and can be made the night before or morning of and packed for a lunch or snack.

Chickpea Caesar Salad Wrap

Romaine Lettuce is used as a wrap and filled with Chickpeas, Croutons and a Creamy Greek Yogurt Caesar Dressing.

  • Romaine Lettuce Hearts
  • Chickpeas/Garbanzo Beans
  • Croutons

Caesar Dressing

  • ⅓ cup Greek Yogurt
  • ¼ cup Mayonnaise
  • 1 Tbsp. Dijon Mustard
  • ¼ cup Grated Parmesan Cheese
  1. In small bowl, mix together greek yogurt, mayonnaise, dijon mustard and parmesan cheese. Mix until smooth.

  2. If using canned Chickpeas/Garbanzo Beans, drain first.

  3. Using the Romaine Lettuce as a wrap, assemble by adding 2 large spoonful's of chickpeas, a handful of croutons and then a spoonful of the dressing on top. Repeat process for the amount of wraps needed. Two to Three wraps=1 serving size for a lunch size meal.
