25 Minute Sausage, Peppers & Potatoes

Love 30 Minute Meals? Then this 25 Minute Meal is right up your alley. I’ve even made this meal as quick as 20 minutes. The key is adding the ingredients into the pan as soon as you chop them to begin cooking them. You start with the onion and potatoes that take the longest to cook, then followed by the peppers and then fully cooked sausage. Because the sausage is already cooked, it only needs to be heated up and browned to your preference. The second important component is chopping the potatoes into small pieces. The smaller the pieces, the faster they will cook and brown. This is a favorite weekday meal in our house with the classic combination of sausage, peppers and potatoes. This recipe will easily serve 4 with a bit extra leftover because the leftovers are versatile and can be used for a either breakfast or a lunch later in the week.

Options, Substitutions, and Tips!

  1. If making this recipe for 1 or 2 servings, you can easily cut the recipe in half by using less onion, 2 peppers, 1/2 a bag of potatoes (or a 1/2 lb. bag of potatoes) and 1 package of fully cooked sausage.
  2. I used an entire medium size yellow onion for this recipe, but when I have those extra jumbo size yellow onions, I only use about 1/2 of the onion.
  3. I recommend using a tiny potato variety such as Fingerling Potatoes (seen in the pictures). Some other small potato variations you might find are New Potatoes, Baby Potatoes and Red Bliss Potatoes. In a pinch, I have used a larger size potato like a Yukkon/Gold Potato chopped in small pieces, but it did take a longer to cook bringing the total meal time closer to 30 minutes.
  4. I like using a red pepper, yellow pepper and orange pepper to bring some extra color into the dish, but you can use any combination of peppers including green peppers.
  5. In order to make this under 30 minutes, it’s important to use fully cooked sausage. There are tons of brands and varieties of fully cooked sausage. My favorite are the fully cooked chicken sausage with a roasted garlic or a spicy flavor.
  6. I top my sausage, peppers and potatoes with a big helping of sauerkraut and mustard. Not only is sauerkraut incredibly healthy, but it also adds lots of extra flavor.
  7. If looking for an option to grill instead, this is a fun meal to make in foil packs. To grill in foil packs simply chop up all the ingredients then divide into 4 big servings or 6 smaller size servings and wrap in aluminum foil. Add to the grill and cook until the peppers, potatoes and onions are the desired tenderness. See pictures here:
  8. Store leftovers in the refrigerator and use for a breakfast or lunch within 4-5 days.

25 Minute Sausage, Peppers and Potatoes

Fully cooked sausage is the perfect shortcut for a super quick and easy under 30 minute meal. A classic combination of peppers, onions, potatoes and sausage.

  • Large Pan/Wok
  • 1 Yellow Onion
  • 1 tbsp. Olive Oil
  • 1 lb. Bag of Potatoes ((smaller versions such as fingerling potatoes work best))
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Red Bell Pepper
  • 1 Orange Bell Pepper
  • 1 Yellow Bell Pepper
  • 2 12oz. Packages of Fully Cooked Sausage ((Shown Here: Roasted Garlic Chicken Sausage))
  1. Cut onion in half then slice pieces to create 1/2 circles. Heat up olive oil in pan or wok on medium heat and add onions.

  2. While onions sauté', cut potatoes into small pieces. Turn heat on oven up to medium/high and add potatoes to pan/wok and stir to mix with onions. Season with salt and pepper.

  3. Core peppers and remove seeds then slice. Add peppers to pan/wok and stir to mix in with potatoes and onions.

  4. Slice sausage and add to pan/wok and stir to mix in with potatoes, onions and peppers.

  5. Continue to cook for 10-15 minutes mixing occasionally until potatoes, onions and peppers are tender and cooked to preference of done. Optional-place lid and reduce heat to medium which will increase the cooking speed.
