3-Ingredient Chicken Satay Skewers

How can three ingredients-chicken, peanut butter, and soy sauce taste so good? I don’t really know the answer to that, it just does. I usually find when I grill chicken breasts that it gets overcooked and ends up tasting dry, but the combination coating of peanut butter and soy sauce keeps the chicken super moist and flavorful. This can either be made as an appetizer or a main dish by adding some sides such as roasted broccoli, vegetable rice, or really anything. In the summer, I like to grill this on our BBQ or propane grill, and in the winter I grill them inside with a grill pan on our stove top.

Options, Tips and Substitutions!

  1. I prefer using chicken breasts, but you could also use boneless/skinless chicken thighs.
  2. No skewers? No problem. I’ve made these in a wok when I haven’t had skewers handy or just don’t feel like the extra effort of placing the chicken onto skewers. There is something about the skewers that make it a little more special and it allows the sauce to coat the chicken better, but in a pinch it does taste pretty good using a wok or pan.
  3. You can use metal or wood/bamboo skewers. If using wood/bamboo skewers you can run them under water for a little bit which will prevent them from being charred/burnt from the grill.
  4. When mixing the sauce together, it can take a bit of extra whisking. At first it might even look like the sauce will not mix together as the peanut butter begins breaking down. Eventually, with enough whisking, the soy sauce will incorporate with the peanut butter and become smooth and look something like this:
  5. These can be cooked right after adding the sauce, or prepared in advance and then refrigerated until ready to grill.
  6. Leftovers will last 3-4 days in the refrigerator.

3-Ingredient Grilled Chicken Satay Skewers

Only three ingredients-chicken, peanut butter, and soy sauce, makes an amazing sauce for juicy, sweet and savory chicken skewers. Can be grilled either outside or inside with a grill pan to be enjoyed year round.

  • skewers, grill or grill pan
  • 1.5-2 lbs. chicken breast
  • ½ cup peanut butter
  • ½ cup soy sauce
  1. In a small bowl, mix peanut butter and soy sauce together. Set aside a full spoonful's to use for dipping.

  2. Cut chicken breasts into strips or cubes that are uniform in size. If using wood/bamboo skewers, you can dip them into water which will prevent them from being charred. Pierce chicken onto the skewers until they are all full.

  3. Using a spoon or paintbrush, coat chicken with peanut butter/soy sauce mixture. You can now either cook them immediately or refrigerate them until ready to cook.

  4. Place on grill/grill pan, turning skewers every few minutes until uniformly cooked. Cooking time will vary based on temperature/heat.

  5. Serve warm with the extra sauce that was put aside in the beginning. If you need a little bit extra dipping sauce, mix 1/4 cup peanut butter and 1/4 cup soy sauce together.
